6 mini sweet peppers (or 3 large bell peppers, halved)

4 oz (113g) goat cheese (soft and creamy)

2 tbsp balsamic vinegar (or balsamic glaze)

1 tbsp extra virgin olive oil1 clove garlic, minced

½ tsp dried oregano

½ tsp sea salt

¼ tsp black pepperFresh basil leaves (for garnish)

1 tbsp crushed walnuts (optional, for crunch)

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
    Prepare the peppers: Cut the mini sweet peppers in half lengthwise, removing the seeds and membranes. If using bell peppers, slice them into quarters.
    Make the filling: In a small bowl, mix the goat cheese, minced garlic, oregano, sea salt, and black pepper until well combined.
    Stuff the peppers: Fill each pepper half with the goat cheese mixture, spreading it evenly.
    Drizzle with olive oil and balsamic vinegar: Arrange the stuffed peppers on the baking sheet, drizzle with extra virgin olive oil and balsamic vinegar for added richness.
    Bake for 20 minutes until the peppers are soft and slightly caramelized, and the cheese is warm and creamy.
