Beef Stroganoff Without Mushrooms

Ingredients
  

1 lb ground beef or sirloin strips

1 medium onion, diced

2–3 cloves garlic, minced

1 tablespoon Dijon mustard

2 tablespoons butter

2 tablespoons flour

1 ½ cups beef broth

½ cup sour cream

¼ cup heavy cream (optional)

8 oz egg noodles or pasta of choice

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

In a large skillet, brown the ground beef or steak strips over medium-high heat.

    Once cooked through, remove and set aside.

      In the same skillet, melt butter.

        Add diced onions and garlic, and sauté until fragrant and soft.

          Stir in the flour to make a roux, then slowly whisk in beef broth until the sauce thickens.

            Reduce heat to low.

              Stir in sour cream, Dijon mustard, and optional heavy cream.

                Return beef to the skillet and simmer for 5 minutes.

                  Meanwhile, cook egg noodles according to package directions.

                    Drain and serve with the stroganoff.

                      Garnish with parsley.
