Ingredients
  

1 can black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 ripe avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1/2 cup goat cheese, crumbled

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon honey (optional)

1/2 teaspoon ground cumin

Salt and pepper to taste

Instructions
 

  • In a large bowl, mix black beans, corn, avocado, cherry tomatoes, red onion, and cilantro.
  • In a separate small bowl, whisk together lime juice, olive oil, cumin, honey, salt, and pepper.
  • Pour dressing over the salad and toss gently to combine.
  • Add crumbled goat cheese and fold in gently.
  • Chill for 10–15 minutes before serving. Enjoy!

Notes

  • Add avocado and goat cheese just before serving to maintain texture.
  • Substitute feta cheese if preferred.
  • To make it vegan, omit goat cheese or use a dairy-free alternative.
  • Great served with grilled chicken, quinoa, or tortilla chips.
