1 lb ground beef (preferably lean 90/10)

2 medium sweet potatoes, diced into small cubes

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp olive oil

1 tsp paprika

1 tsp cumin

½ tsp salt

¼ tsp black pepper

½ cup bell peppers, diced (optional, adds flavor and color)

Instructions
 

  • Heat the pan: In a large skillet over medium heat, add olive oil and sauté the onions and garlic until fragrant, about 2 minutes.
    Brown the ground beef: Add the ground beef to the skillet, breaking it apart with a spoon. Cook until no longer pink, about 5 minutes. Drain excess fat if necessary.
