Ingredients
  

- 1 cup all-purpose flour

- 1/2 tsp baking powder

- 1/4 tsp baking soda

- 1/4 tsp salt

- 1/2 cup granulated sugar

- 1/4 cup melted unsalted butter

- 1 large egg

- 1/2 cup buttermilk (or milk + lemon juice substitute)

- 1/2 cup mini chocolate chips

- 1/2 tsp vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C). Line or grease a mini muffin tin.

    In a bowl, mix flour, baking powder, baking soda, and salt.

      In another bowl, whisk sugar, melted butter, egg, buttermilk, and vanilla.

        Gently combine wet and dry ingredients. Do not overmix.

          Fold in the mini chocolate chips.

            Fill muffin tins 2/3 full with batter.

              Bake for 10–12 minutes or until a toothpick comes out clean.

                Cool on a wire rack and enjoy!
